Rexburg woman offering free baked goods will start selling items in a food truck

REXBURG – For Alex Andrews, baking is a way to relax and de-stress and she enjoys providing free baked goods for the community.

The 22-year-old Rexburg woman launched Little Free Bakery Rexburg in September. Every Sunday, she puts 30-60 items outside her complex at 280 East Lorene Street, building 20. She places them in a box on the stairs around 3 p.m.

The baked goods are available to anyone on a first-come, first-serve basis.

“I always tell people to check my social media because that’s where I post all my updates about when the box will be out and what I’m making,” Andrews tells EastIdahoNews.com. “There’s a little disposable camera if they want to take pictures and I have a guest book they can sign.”

If you’re unable to make it to the free bakery, she’ll also be selling her baked goods out of a food truck starting this Saturday. It’s called Old Souls Bakery and will be in the food court next to Wolfe Lighting & Accents at 250 West Main Street.

Beignets are her big-ticket item. A variety of other pastries will also be available, including croissants, cinnamon rolls and coffee cake.

Saturday’s grand opening will be held from 9:30 a.m. to 1 p.m.

Andrews moved to Rexburg from Montana several months ago to be closer to family. She grew up in California and is currently attending Penn State online while working full-time.

She started baking to get through a difficult period in her life, and it quickly grew into something much bigger.

“I was baking too much to eat it all myself so I started giving it away. That’s how the free bakery started,” Andrews explains.

It also gives her a chance to try out new recipes.

Eventually, people started asking if they could buy more products from Andrews because they liked them so much. She sold items out of her house for a while. The large volume of traffic at her home led her to launch the food truck.

She hopes to see it evolve into a permanent storefront one day.

“I feel like I’m making a small difference,” Andrews says. “I’m not curing cancer or anything, but I’m bringing a little bit of joy into people’s lives.”
