A heavily tattooed ex-bikie has faced court as he vows to fight charges he supplied methamphetamine and threatened a man with a knife.

Troy Fornaciari - former president of the Finks Outlaw Motorcycle Gang South Coast Chapter - was in Wollongong Local Court on Wednesday where he pleaded not guilty to the charges which police allege took place in Dapto, south of Sydney, last year.

Fornaciari, 38, is known for his daring facial ink, which includes the words 'not guilty' on one cheek, 'Gods Hands' written across his chin and the words 'tuff love' tattooed onto his eyelids.

The dad-of-two faced court via audio-visual link from the South Coast Correctional Centre on Wednesday, where he has been since his arrest in May 2022.

Police allege Fornaciari and another man bashed and threatened a man with a knife in a Dapto home on May 13 last year 

Defence lawyer Justine Hall, on Fornaciari's behalf, entered pleas of not guilty to commercial drug supply, using an offensive weapon in company, wounding, and intimidation.

A fifth charge was withdrawn and dismissed.

Police allege Fornaciari and another man bashed and threatened a man with a knife in a Dapto home on May 13 last year.

The alleged incident left the victim with significant head injuries, police said at the time of the incident.

Police tracked down Fornaciari and his co-accused five days later, arresting the pair in a unit at Liverpool, in Sydney's west.

Police will allege their investigation also revealed Fornaciari had been involved in the supply of 250 grams of methamphetamine between Sydney and Wollongong in the month prior to his arrest.

Magistrate Claire Girotto committed the matter to trial, stating that a brief of evidence had been served and no witnesses will be required.

Fornaciari appeared to be at peace with the magistrate's ruling, telling her 'thanks miss, have a lovely day'.

Fornaciari will return to Wollongong District Court on February 14 where he will receive a trial date.

The ex-bikie told a court in 2019 he had wanted to get rid of his infamous tattoos and labelled them 'embarrassing'. 

The once clear-skinned man sports ink on most areas of his face as well as other parts of his body, including a bent over woman surrounded by flames on his right bicep, complete with a hand with long fingernails.
