If your mom is a staunch Hindu and dad’s a Christian you might be at a dilemma. Your mom may protest against you breaking eggs to bake a Christmas fruitcake and she may not like the idea of alcohol in cake. But if you are from an average Sri Lankan Tamil household with a Hindu-Christian mix, Christmas can hardly be avoided. In which case an eggless, alcohol free Christmas fruitcake recipe may go a long way in religious conflict resolution at household level this Christmas!

The simple substitute for alcohol is orange juice. Here’s how to make your own Eggless, alcohol free Christmas fruitcake.

Serves: 8

Ingredients
♦ For fruit soak: Fresh orange Juice – ½ Cup to ¾ Cup (from 2 oranges)
♦ Tutti frutti – 5 to 6 table spoons approximately
♦ Cashew nuts – 1 to 2 tablespoons
♦ Dried figs – 1 to 2 tablespoons
♦ Walnuts – 1 to 2 tablespoons
♦ Dried dates – 1 to 2 tablespoons
♦ Almonds – 1 to 2 tablespoons
♦ Dates – 1 to 2 tablespoons
♦ Candied ginger – 1 to 2 tablespoons
♦ Raisins – 1 to 2 tablespoons
♦ Garam masala/nutmeg + cinnamon – 1 tablespoons
♦ Salt – ½ tablespoons
♦ For Cake: Soaked dried fruits
♦ All purpose flour – 1 Cup
♦ Condensed milk – ½ Cup
♦ Butter – ¼ Cup
♦ Sugar – ¼ Cup
♦ Orange juice/milk/ water – 3 to 4 tablespoons
♦ Vanilla extract – ½ tablespoons
♦ Orange zest – ½ tablespoons
♦ Baking powder – ½ tablespoons
♦ Baking soda – ¼ tablespoons

Instructions
1. For fruit soak : Mix all the ingredients in a glass bowl or container and cover with wrap and refrigerate overnight or up to 36 hours.

2. For cake: Preheat your oven to 180 C. Mix baking powder, soda, flour and sieve twice.
3. In a mixing bowl, beat butter and sugar until light and fluffy. Then add in condensed milk. Beat for three to five minutes or until pale and light.

4. Add half of the flour and orange juice. Fold this into the wet mixture. Once combined, add the rest flour and fold well.

5. Add the soaked dried fruits and fold them well.

6. Grease a seven inch cake tin and put the cake batter in it.

7. Bake in a preheated oven at 180 C for 30 to 35 minutes.

8. Let it cool and enjoy!

Notes
You can replace the dried fruits and nuts according to your preference. Just make sure the total comes to the same. It should be approximately 1 to 1/4 Cup. You can bake this cake in a pressure cooker or cooker. Heat for five minutes in low to medium flame and then bake for 35 minutes, covered without whistle.
