A delicious way to serve up cauliflower that is low in fat, calories and carbs!
2 cups cooked cauliflower florets
1 egg, beaten
1/4 cup green onions, minced
2 tbsp Parmesan cheese, grated
1/2 tbsp garlic powder
1/2 tbsp chopped fresh coriander leaves
In a large mixing bowl mash cooked cauliflower. Add egg, onion, Parmesan and spices. Mix well and form 8 fritter patties. Coat nonstick skillet with cooking spray and cook until golden brown on each side.
Makes 8 1/4-cup patties.
